to cellar
Each Domaine Vendome cuvée channels the singular profile of its plot’s soil – meticulously studied and faithfully expressed in every bottle.
Through soil mapping, precision viticulture, and plot-by-plot vinification, we allow the terroir to speak as we listen intently.
The soils that shape our wines
- Grus (weathered granite) – Clean and precise white wines with a delightful freshness.
- Loess (deep Aeolian sands) – Crisp and elegant white wines with a delicate minerality and refined reds.
- Rolled pebbles & red or black clay – Voluptuous fruit-forward red wines showing fullness and depth.
- Granite – More concentrated, structured and intense red wines
- Baryte (barium sulfate) – A rare white mineral that lends a layered, spicy edge to our red wines.
Reading and nurturing our soils
Since 2021, we have been carrying out a detailed plot mapping project to gain a deeper understanding of the geology of our terroirs.
What we seek to achieve:
- Optimise the soil/grape variety synergy to produce wines expressing the mineral signature of the soil, and the pure expression of each grape variety.
- Identify the core traits of each soil type in an ongoing effort to refine organic practices and promote plot-by-plot viticulture.
Plot-by-plot viticultural practices
- We sow inter-row green manure to curb erosion and summer drought, using parcel-specific seed blends matched to the needs of the vine according to each soil type.
- We apply natural composts to stimulate and sustain microbial life in the soils.
- We carry out mechanical weed control, intercep or mowing, to limit competition while respecting soil structure.
- We preserve natural hedgerows and woodland bordering our plots, providing habitats for local wildlife and beneficial organisms.
- We practise gentle pruning, with the aim of preserving vine health and long-term longevity.
Plot-by-plot vinification
In the winery we vinify each plot individually to preserve its typicity and the aromatic purity of each grape variety.
This philosophy translates into a series of precise choices:
- Careful control of fermentation temperatures and fermentation to retain aromatic finesse.
- Gentle extraction to achieve the perfect balance of structure and elegance.
- Judicious ageing choices to fully reveal the precision of the terroir.
How we mature our cuvées
Each vessel is carefully selected depending on the cuvée and the intended profile:
- Raw concrete tanks – Refine the tannins of the Syrah and preserve fruit purity.
- Stainless steel vats – Preserve freshness and aromatic clarity in our whites.
- Demi-muids (1 or more wines) — Impart structure and mellow without heavy oak.
